Ayurveda categorizes food into six groups based on their taste (rasa) – sweet, sour, salty, bitter, pungent and astringent. Of these six, the bitter taste is important, as it is intrinsically associated with our overall well-being.

On our tongue, stomach, and gut are present bitter taste receptors (T2R) that can perceive bitterness. The T2R receptors get stimulated by the bitter taste and trigger a chain reaction resulting in the release of beneficial digestive juices and enzymes so essential for healthy digestion.
